Abstract:Castanea mollissima,is a traditional agricultural by-product in China,and annual total yield of Castanea mollissima reaches 469 800 ton accounting for 60% of total yield of Castanea mollissima in the world.The yield of Castanea mollissima is increasing with enriching such products day by day.The authors have described for Castanea mollissima in the nutrition value and medical value,current status of the products processing,difficult technical issue during the processing,processing and utilizing the residual,and come up with the thinking in the processing development and problems should be solved.
