Abstract:In order to better produce" harmless,safe and green" walnut,Yangbi county has analyzed and evaluated the quality and safety of walnut under different drying methods.The results show that the fat content in these 4 kinds of curing conditions of walnut from high to low is smoked smoked fruit,fruit,fruit and coal washing smokeless fruit;the content of heavy metals in walnut kernel of lead,cadmium and mercury aflatoxin B1are far lower than the limit of food hygienic standard in the overall security level;the acid value and peroxide value is an important indicator of fat and high fat content of food quality,but the acid value is higher than that of other smokeless fruit three,peroxide value of coal smoked fruit is higher than the other three,are in line with the requirements of NY/T1042-2014standard,which is non -toxic,harmless and safe characteristics.
