摘要：为科学评价和鉴定锥栗的品质特性以及加工利用提供理论参考依据 ,本研究以 4个湖南省选育的锥栗品种·华 栗 1号,·华栗 2号,·华栗 3号,·华栗 4号,为试材 ,测定和比较了4个锥栗品种坚果外观品质指标、内在品质指标及坚果中 6种营养元素的含量 。结果表明:4个锥栗品种坚果品质存在不同水平的差异性 。其中 ,·华栗 1 号,单果重(11.68g)显著 高于其他品种 ,属大果型 ,可溶性糖(10.08%)、维生素 C(325.80以g●g-1 )、Zn(5.34以g● g-1 )、Cu(5.57以g● g-1 )含量也 最高 ,其余营养成分较高;·华栗 2号,单果重 8.39g,属于中等果型 ,K(0.39%)、Ca(370.67以g● g-1 )、Zn(5.34以g● g-1 ) 含量最高 ,可溶性糖、蛋白质、Fe含量较高;·华栗 3号,单果重 8.85g,属中等型 ,坚果光泽油亮 ,外观漂亮 ,淀粉(36.97%)、 Ca(366.67以g●g-1)、Fe(10.03以g●g-1)含量最高 ,可溶性糖、维生素 C、Cu含量较高;·华栗 4 号,单果重 8.29g,属 中等 果型 ,蛋白质、脂肪含量最高 ,K、Zn、Cu含量较高。
