Abstract:Abstract: ToprovideareferenceforthescientificevaluationandidentificationofthequalitycharacteristicsofCastanea henryiandprocesingandutilization,thefourcultivarsof·Hualilst,·Huali2nd,·Huali3rd,·Huali4th,selectedfrom Hunanprovincewereusedastestedmaterials,theappearancequalityindexes,theinnerqualityindexesandthecontentof sixnutrientsinthenutsoffourC.henryivarietiesweredeterminedandcompared.Theresultsshowedthatfruitquality hadsome diferencesin diferentlevelsamong fourcultivars.Among them,the average nutweightof ·Hualilst, (ll.68g)wassignificantlyhigherthanthatofothervarieties,anditbelongedtolargefruittype.Thecontentsofsoluble sugar(l0.08%),vitaminC (325.80以g●g-l),Zn(5.34以g●g-l)andCu(5.57以g●g-l)werealsothehighest,andoth- ernutrientswerehigher.Theaveragenutweighsof·Huali2nd,was8.39gandbelongedtomediumfruittype.Thecon- tentsofK (0.39%),Ca(370.67以g●g-l)andZn(5.34以g●g-l)werethehighest,andthecontentsofsolublesugar,protein andFewerehigher.Theaveragenutweightof·Huali3rd,was8.85g,whichbelongedtomediumfruittype,thenutwasshiny andbeautiful,thecontentofstarch(36.97%),Ca(366.67以g●g-l)andFe(l0.03以g ●g-l)wasthehighest,andthecontent ofsolublesugar,vitaminCandCuwerehigher.Theaveragenutweightof·Huali4th,were8.29g,whichbelongedtomedium fruittype,thecontentofproteinandfatwasthehighest,andthecontentofK,ZnandCuwerehigher
